Okay, I have this soup I only make one time a year. Bobby asked "when are you going to make the best soup ever?" I knew what he was talking about. It is my Ham and Bean soup. I only make it once a year because I need stock from a turkey and stock from a ham. When do I have both? After Christmas. When I make stock it takes all day. When I make this soup it takes longer. I chill for an entire day and skim the fat off the top. The ham stock looks like Jelly by then, and Jill just said "YUCK, why would you take a picture of THAT mom" so I won't show you what it looks like....hee hee. I think it is because of the ham bone marrow. Whatever...it is the best soup ever...so who cares what the stock looks like right? Besides, once I combine the two and heat it up, it just looks like broth and taste like heaven.
Here is what I use:
Onion, Garlic, Carrots, Celery, Rosemary, chop them up and saute slightly. Add the yummy broth.
Next comes two big can s of petite diced hunts.
Chunks of leftover ham.
The beans ...White Kidney...two cans.
I cook the pasta separate, and not completely. Two boxes. I know....how much soup am I making? Crowd size soup...crowd size.
Combine it all together in a huge stock pot and serve with rolls (buttered of course...with butter, so very healthy! LOL) and freshly grated Parmesan cheese.
Then...ENJOY!
Okay, so I ate half before I took the picture, I couldn't help myself. The other reason we only have this once a year is that I make so much of it, and we love it so much, we eat it for lunch and dinner....we eat it so often that by the time we are done with it, we are tired of it and don't crave it again until Christmas! LOL
I made the soup on Saturday and Sunday. We ate it Sunday night, Monday afternoon, and tonight. I am not tired of it yet and I am looking forward to lunch tomorrow. Rob will be making tacos for dinner tomorrow night...because I am working from open to close....and he is home all week. (He is so lucky!) I am having Rob bring a container of soup over to my mom. It should be gone by Thursday. Until then, yummmmmm.

I made this on my lunch break,
The wife of one of the doctors at the office where I work just had a baby. I made a little gift for them and brought it in today. He seemed to like it, I am sure his wife will appreciate it. It has envelopes for locks of hair, a spot for a CD full of photos, and pages that come out, and you can put pictures on both sides. It fit perfectly in this empty tin...I think from my vanilla hodgepodge hardware. Cute huh? So there you have it. Home made goodies from the heart.
